Gluten Free Chocolate Chip Cookies
These cookies are great. They disappeared fast. If you're looking for a gluten free cookie, this recipe is highly recommended. I'm not gonna lie and say they're exactly like a classic chocolate chip cookie, but they stand on their own.
What you will need
2 Tbsp (30 g) butter
1/2 tsp (3 g) baking soda
1/4 tsp (2 g) salt
1/4 cup (55 g) brown sugar
1 large egg
2 teaspoons (10 ml) vanilla extract
2 cups (200 g) almond flour (blanched or raw)
1/2 cup (170 g) chocolate chips

Combine the butter, brown sugar, baking soda and salt. Mix together with a spoon or spatula.

Add the egg and the vanilla. Dump in the flour.

Mix until ingredients are all incorporated.

Add the chocolate chips and fold them into the dough. The dough is similar to a traditional chocolate chip cookie dough at this point, just a little more crumbly.

I used a standard Tablespoon to size my cookies. Press them together. I kept them in a balled shape and was happy with the results. They won't spread much, but a thicker cookie leaves a softer interior with this dough.

Into the oven. Bake these cookies for about 12 minutes.
