Humble ingredients. Devastatingly delicious.
What you will need
4 oz grated parmesan
12 oz. Bacon
1 lb Spaghetti
4 Tbsp Olive Oil
1/2 cup Water
Salt, as needed
Black Pepper, as needed(Nutritional facts 391 calories, 24.21 g fat, 29.24 g carbohydrates, 15.54 g protein, 364 mg cholesterol, 688 mg sodium)
How to cook
Place parmesan in a mixing bowl.
Whisk in the 2 eggs.
Add a little salt and pepper.
Cut the bacon into chunks.
Boil spaghetti in salted water until tender to your liking.
Heat olive oil in a large sautée pan over medium heat. Cook the bacon until crispy.
Dump the strained spaghetti into the pan. Stir it up.
Add the water. It should come to a simmer quickly. As soon as that happens, remove the pan from the heat. Stir to release some of the bacon fond from the pan.
Stir in the egg and cheese mixture. Don't stop stirring. The cheese should melt into the warm water and the egg should cook just enough to add to the thickening, resulting in a thick, creamy coat of sauce.
Adjust seasoning as needed.
