Keto Egg & Avocado Salad
This is a super fresh version of egg salad with the addition of creamy avocado and chives. This is great on toast, or in lettuce wraps!
What you will need
6 Hard Boiled Eggs
1 Avocado
3 Tbsp Mayonnaise
2 tsp Lemon Juice
1 Tbsp fresh Chives
pinch of Salt
pinch of ground Black Pepper

Gather all ingredients.

Portion all ingredients.

Finely chop the chives.

Cut the eggs into 1/4" cubes.

To make the dressing, combine mayonnaise, lemon juice, salt and black pepper. Mix well.

Add the chopped egg and avocado and toss well.

Sprinkle chives to finish.
