Everything you love about Caprese but transformed into a grain bowl. The addition of avocado and balsamic dressing creates a super filling and fresh bowl.
What you will need
12 oz Microwavable Quinoa
1 Avocado
1 pint Cherry Tomatoes
8 oz Fresh Mozzarella Perline
.5 oz fresh Basil Leaves
4 tbsp Balsamic Vinaigrette

Gather ingredients.

Any kind of fresh mozzarella will work for this recipe. If you are only able to get a larger ball, just chop it into smaller cubes!

Break off a few large leaves of basil.

Layer the basil leaves on top of each other and roll them up together. Lay the roll of basil on the cutting board and slice in thin strips.

Portion the cooked quinoa between 4 bowls. Evenly distribute the mozzarella, tomatoes, and other toppings in the bowls.

Add the sliced avocado, drizzle with the balsamic vinaigrette, and top with the shredded fresh basil.
